You can use any kind of shredded cheese, but they recommend fresh Parmesan or cheddar. I just tried the cheddar tonight and. Oh. My. God. Best grilled cheese ever!!!! The cheese on the outside is like a cheesy, crispy crust and because you cook it just a little longer than normal, the cheese on the inside is extra gooey. &hearts &hearts &hearts
