I've enjoyed all 3. I've played a healer since I started MMORPGs, and I LOVE healing on my disc priest. It's a great mix of proactive and reactive gameplay.
Tanking is fun - you get to control the pace of a group or raid. Oh, man, MTs for big raiding guilds are such a bunch of big-dicked control freaks. Pretty literally I've never met another woman who pushed her way in there, although I have heard of some on other servers.
DPS should be more relaxing, since no one dies if you miss your timing like on a tank or healer. But I'm too much of a perfectionist on it, trying to maximize my dps.
